boil 3 cups pasta
cool completely
finely dice
green onions (don't use more than 1)
celery
carrots
mandarin oranges
orange pepper
olives
apples
grapes
etc. you get the idea
combine chilled noodles and all of the veggies/fruit with chicken ( I did canned, but I am sure cooked and shredded (and cooled) would be even better!)
Add 4 T. Vegannaise (the recipe called for 2 T. olive oil so you can try that too, I just wanted it a little creamier)
Juice of 2 oranges, one lime, one lemon
1 T. dry mustard
2 t. honey
1.5 t. rice wine or raw apple cider vinegar
salt and pepper to taste
If needed adjust... you may need more of any one of these items depending on how much sweet fruit you put in the salad.
The kids liked this, but would have LOVED it, if I hadn't put 3 very fresh and spicy green onions in it-- yuck!
